Production and aging
Pago de los Capellanes Crianza is a single varietal wine made from 100% Tempranillo grapes. The grapes are harvested in early October. Once the grapes arrive at the winery, controlled alcoholic fermentation begins, with the addition of selected yeast from the best vineyards for 30 days, with daily pump overs. Malolactic fermentation takes place without the addition of bacteria, and the cellar is kept at 20ºC for 24 days, controlling the levels of malic and lactic acid.
The wine is aged for 12 months in new and 2-year-old French oak barrels of 300 liters, made from selected grains.
Tasting Notes for Pago de los Capellanes Crianza
- Appearance: Pago de los Capellanes Crianza has a very intense bright cherry color, with cardinal red edges.
- Nose: On the nose, it is very frank, with a good fruit-wood balance in which vanilla tones blend with ripe fruit, black fruits, and forest fruits. Notes of leather and licorice stand out, characteristic of the French Oak blend with the varietal aromas.
- Palate: Smooth, but filling the palate with balanced flavors, and also perceiving fine tannins that will contribute to its longevity, ending with a long and elegant finish and aftertaste.
Pairing
Pago de los Capellanes Crianza is ideal to accompany cured meats, roasted red meats, beef round, game stews, and aged cheeses.
It is recommended to uncork and decant this red wine one hour before consumption, and serve it at a temperature of 16 to 18ºC.
