White tea is characterized because in its collection only the buds and new shoots are taken before they open. Only two processes are used for its production: withering and drying. It is therefore a non-oxidized tea and the closest to the freshly picked tea leaf.
The name "white tea" is derived from the fine silvery-white hairs on the unopened buds of the tea plant, which gives the plant a whitish appearance. It is also known as the tea of youth, due to the fact that it has the most antioxidants in the tea.
