Spontaneous fermentation, with its natural yeast, for two weeks. Temperature controlled between 16-18 degrees. On its lees for several months.
Selection of 40 to 50 year old vineyards. Dry farming. Density of 1275 plants per hectare. Altitude 850m. Extreme continental climate, with great diurnal amplitude (over 20ºC). Clayey and calcareous soils.
Intense strawberry colour.
Aromas of plums, red fruits and wild herbs.
In the mouth it is pure, with notes of berries, strawberries, balanced and with a long finish.
Food pairing: excellent to combine with goat cheese and walnut salad, or with a smoked salmon dish.
