Pago de los Capellanes Reserva has already become a classic of the Ribera del Duero D.O.. A varietal wine made from Tinto Fino (Tempranillo) produced by Bodega Pago de los Capellanes in Pedrosa del Duero, province of Burgos. The grapes come from the vineyard Pago de los Capellanes, planted on clay-limestone soils. A vineyard with low yields, which allows for a thorough monitoring of the fruit's quality. A cold pre-fermentation takes place for 6 days at a temperature of 14ºC. The fermentation takes place in 20,000-liter tanks. A controlled fermentation at a temperature of 28ºC that lasts for 30 days. The malolactic fermentation takes place for 28 days at a temperature of 20ºC. Aging takes place in new French oak barrels for 18 months, with rackings every 6 months in the underground cellar with a depth of 10 meters. Once aging is finished, it is bottled without filtering or clarifying. We recommend decanting it one hour before serving. Pago de los Capellanes Reserva is a red wine with great aging potential (10 years).
