The scallop is a bivalve mollusk that is mainly found on the Galician coasts, very similar to the traditional scallop, but smaller in size, with an oval and dark shell and soft white flesh. They are especially appreciated for their fine texture and exquisite and intense sea flavor
These scallops in Galician sauce are selected based on their size, they are cooked and shucked by hand. They are then washed and hand-packed in an artisanal way and a broth made with the highest quality natural products and following traditional recipes is added to them.
