The DOP Tetilla cow cheese is one of the most representative and well-known Galician cheeses both within and outside the region, and has a designation of origin (Queixo Tetilla).
Winner of the Silver Medal at the 2024 World Cheese Awards held in Portugal.
The DOP Tetilla cheese, from tender to semi-cured, is mainly made from pasteurized milk from 100% Galician cow breeds: Galician Blonde, Frisian, and Brown Alpine. Its conical shape, given by the funnels where it coagulates, is what gives it its name as it resembles a "nipple" or "breast". It shares this shape with other Galician cheeses such as San Simón da Costa cheese.
With a mild, milky flavor reminiscent of fresh milk or cream, it is buttery with a touch of salt.
With a thin, straw-yellow rind, without molds, its paste is off-white, soft, creamy, and with very few or no eyes.
It is ideal to pair Tetilla cheese with acidic and fresh white wines, or with young Mencía red wines from Ribeira Sacra.
