PRODUCTION
Made using the technique of washed curd and semi-cooked curd, which rounds out its flavor and brings out very mature butter aromas and flavors, pleasant sweet notes, and toffee flavors. Only natural ingredients are used for its production, without additives: raw cow's milk and animal rennet. It is matured for a minimum of three months in a cellar under high humidity and low temperature conditions. Throughout its maturation, it undergoes periodic washes on the rind with brine made from its own whey.
VISUAL: Dry rind, with predominant pink and orange tones derived from the periodic washes on its rind during maturation. The cut and texture are elastic, with slightly softer edges due to the rind washes. Yellowish interior, creamy paste, and few eyes.
AROMATIC: We appreciate complex aromas, with predominant scents of mature milk, caramel, butter, and nuts.
TASTE: Upon tasting, we notice a creamy, buttery, and melting character. The dairy nuances of toffee and mature butter stand out, as well as herbal and nutty notes. It is a light, flavorful cheese, with a buttery texture and a very balanced, subtly sweet and long aftertaste.
