It contains pectin which reduces cholesterol and diabetes, amino acids, acids, sugars, and fibers. It also has anti-inflammatory properties for the digestive system, as it acts as a mild laxative and is astringent in cases of diarrhea or colitis. Additionally, it is diuretic and purifying, anti-catarrhal and hypotensive, and helps in the elimination of fats.

There are many varieties of apples and the season generally starts in September and lasts until June, although there are varieties that are in the market from August to November and others all year round. The most popular varieties are:

• Fuji: round, medium-sized, dark red skin with yellowish green background, dense, sweet and crunchy flesh, long shelf life.
• Pink Lady: cross between the Australian apple Lady Williams and Golden Delicious, pink skin, sweet and crunchy, not very floury, strawberry and vanilla aroma.
• Marlene: variety from Südtirol in the Alps.
• Royal Extra: very round shape, skin with red and orange streaks and greenish yellow background, white, crunchy, sweet and tasty flesh.
• Granny Smith: bright green skin, crunchy and acidic, strong texture and slow oxidation.
• Golden: smooth, bright yellow skin, white flesh and very sweet.
• Golden Fr: Golden variety from France.
• Starking: one of the most well-known varieties, shiny skin with red and green streaks, yellowish white, crunchy flesh, sweet taste.
