The flavor of 100% Iberian breed ham is characterized by its high level of oleic acid and its high unsaturated fats that provide that characteristic flavor. And that is so beneficial for our body, Omega 3 and 6.
Within these factors, the better the feeding, origin of the Iberian breed and type of breeding they have had, the better quality the ham will have. When consuming one ham or another, especially when comparing them, the breed and whether they have been fed on acorns, pastures, or even fruit will stand out over white breed hams that have been fed on feed.
This does not mean that you have to buy an Iberian ham, if you have a tighter budget you can find Serrano hams that have an exquisite flavor and texture.

Breeding and Feeding: Maldonado ham comes from purebred Iberian pigs, raised freely and with great care in the Dehesas owned by this company in Alburquerque, Badajoz (Extremadura). Feeding during the montanera period is based on acorns and outside of this period, it is based on herbs and roots typical of La Dehesa. Breeding and feeding of the animal are fully certified by independent certification bodies.
Production Limited production. Completely artisanal production according to ancestral techniques. This small production allows Manuel Maldonado and his team to put all their knowledge and care into each piece produced, resulting in a final product of excellent quality.

Qualitative/Quantitative composition: Ingredients: 100% pure Iberian acorn-fed pork, salt, sugar, acidity regulator (E-331iii), Preservatives (E-252, E-250) and Antioxidant (E-301).
Organoleptic characteristics: Characteristic color from pink to purple-red and appearance when sliced with fat infiltrated in the muscle mass. SMELL AND TASTE: delicate, slightly salty or sweet meat. Pleasant and characteristic aroma of the area influenced by its special climatology of very cold winters and very hot summers. TEXTURE: slightly fibrous. FAT: shiny, white-pink-yellowish coloration, aromatic and pleasant taste, the consistency varies depending on the percentage of acorn feeding.

Physical, chemical, and microbiological characteristics: Very balanced food in terms of its composition. Contains monounsaturated fatty acids (oleic, linoleic, palmitic, and stearic) - known as good fat - in a proportion higher than other meats.
Expiration date: It has no expiration date, but it is recommended to consume it within 6 months from the moment of sale.
Storage conditions: Dry and cool place (between 10º and 20º) and preferably hung. Once sliced, it must be consumed immediately or wrapped in wax paper or transparent film to avoid contact with air. In any case, it is advisable to only cut what is going to be consumed. It has an approximate consumption period of 3 months once it is sliced, but it is advisable to consume it within 15-20 days.
