The gourmet range represents in PICUALIA the juice of November olives. In this month, the olive changes its green color to a violet color, this process is known as Envero. The ripened olive preserves a green oil but with the first notes of maturity, which appear as a result of the fruit's ripening. Although apparently the olive has not lost the freshness of October, the tasting notes and characteristics of November make it different.
The predominant tasting note is tomato but with more maturity, losing the intensity of green grass and appearing other positive attributes that make it special, such as ripe banana or other ripe green fruits, finding apple, thyme or licorice among its tasting notes.
