Edam cheese is a Dutch cheese very similar to gouda, which is traditionally made in the form of balls or spheres coated with a red or yellow paraffin. It is recommended that Edam cheese should not be eaten until it has been ripened for at least five weeks and is named after the town of Edam in the province of North Holland
