Pablo Garrigós Ibáñez's Garrigós Delicatessen Jijona nougat comes in a 150 g format and belongs to the Supreme Quality category. Made in Jijona (Alicante), it is protected by the Protected Geographical Indication Jijona and Turrón de Alicante and reflects a family tradition of more than three generations. Its recipe combines 74% toasted Mediterranean Marcona almonds and 17% pure orange blossom and rosemary honey, together with free-range egg white and cane sugar. The mixture is slowly worked in traditional «boixets» with a wooden mallet to achieve its smooth texture. It has received recognition at the Great Taste Awards and bears the Artesanía Comunitat Valenciana seal. For serving, a temperature between 16 °C and 18 °C is recommended. Cut into thin 1 cm slices with a warm, non-serrated knife. It can be paired, in a tulip glass, with sweet Pedro Ximénez, Fondillón de Alicante reserve, or 20-Year-Old Tawny Port.
