Origin: Cartagena. More rich and sought after than the mud red mullet, the rock red mullet has a sharper snout and has a dark red longitudinal band and three yellow bands. It contains proteins, omega-3 fatty acids, iodine, selenium, phosphorus, potassium, vitamin B6, B12, and vitamin D. The red mullet is a semi-fatty fish (3.7 g of lipids per 100 g of edible portion), which has a high content of polyunsaturated omega-3 fatty acids and proteins of high biological value. The mineral content follows a very similar sequence to that discussed in other fish. Red mullets are a source of selenium, phosphorus, iodine, and potassium. A serving of red mullets covers double the recommended iodine intake for men aged 20 to 39 who engage in moderate physical activity. The vitamin present in the highest proportion in red mullet meat is vitamin B12 (150% DV/day), followed by B6. Regarding fat-soluble vitamins, it is worth noting the contribution of vitamin D, which contributes to the normal absorption and utilization of calcium and phosphorus.
