The raw material is the stupendous mussel (Mytilus edulis or Mytilus galloprovincialis) that is raised in the Galician mussel beds. The mussels, after washing, are steamed and fried in a marinade prepared with the same recipe for almost 100 years: oil, vinegar, paprika and bay leaf.
