Our meats are filleted or portioned at the time of the order , as we have been doing since 1939 in our traditional butcher's shops.

The cuts are sent vacuum packed guaranteeing the cold chain , ready to be consumed refrigerated or frozen and are properly labeled to ensure absolute traceability of the product.

The consumption of secreto has increased in recent years thanks to the work of the most acclaimed chefs and restaurants. It is a piece composed of muscle fibers and marbled fat , forming a fillet. It is also known as crossbreast. It seems that the name secret is due to the fact that it is a cut that is hidden and can only be seen if the muscle is cut horizontally, although there is also the theory that this exquisite piece receives the name secret because due to its qualities, butchers kept the secret for their consumo.Con this piece can be prepared in numerous recipes. Minced meat can be made into meatballs or hamburgers , it can also be roasted and included in stews and rice dishes.
