The aging of this wine has its origin in the old VIDES cellars that functioned as warehouses in the purest artisan and traditional style.

Elaborated by means of a first phase of biological aging -in veil of flor- which gives it a slightly sharp aroma with hints of yeast and fruit and a second oxidative phase that gives it new organoleptic characteristics.

This Amontillado is a benchmark of winemaking expertise. Extremely fine, pure expression of biological aging combined with the complexity of oxidative aging. Amber-colored with complex and sharp aromas, this limited production amontillado is dry, mineral and saline on the palate, with hints of dried fruit and a long, persistent finish.

This wine, of exquisite complexity, is capable of triumphing in multiple terrains, contributing its personal touch to a great variety of dishes - smoked, cured cheeses, white meats, blue fish, spicy dishes. As a companion to certain vegetables such as asparagus and artichokes, it offers sublime moments.
