Nabal Albillo Mayor 2021 is one of the most unique white wines from Bodegas Nabal, representing one of the most authentic expressions of the Albillo Mayor variety in the Ribera del Duero. The grapes come exclusively from this indigenous variety, cultivated in small plots of old vineyards, with some vines exceeding 70 years of age. The winemaking combines traditional and innovative techniques: an initial cold maceration, followed by spontaneous fermentation in concrete amphorae, stainless steel tanks, and 500-liter barrels. The wine ages on its lees in French oak and acacia barrels for at least eight months, with periodic batonnage adding volume and texture. On the nose, it offers aromas of fruits like pear, apple, white peach, and apricot, with notes of white flowers, fennel, and anise. On the palate, the wine is balanced, showing a creamy texture with fresh acidity and a long, persistent finish. It pairs well with seafood, smoked fish, foie gras, seafood rice dishes, and seasonal cuisine, showcasing the potential of Albillo Mayor grown under these conditions.
