Viña Corrales Fino Saca 2023 is an ambitious project from the Marco de Jerez, in collaboration with Peter Sissecky and Carlos del Río. It originates from the historic Pago Balbaína, where the Barajuela albariza and Atlantic influence give the wine a unique identity. The 2023 Saca reflects a warm year and excellent development of the flor veil due to the westerly wind before bottling. After an average aging of nine years, the result is a deep fino, with a creamier texture than other saca, but without losing the freshness of Balbaína. It has aromas of raw almond, bread, fresh yeast, citrus peel, and delicate salty notes. On the palate, it is silky, mineral, with marked umami, and a dry, salty finish. This fino is excellent with oysters, seafood, Iberian ham, sashimi, and high gastronomy, and can also be enjoyed alone as one of the great wines of Jerez.
