The 100% Iberian acorn-fed organic ham from Señorío de Montanera comes from organic agriculture and livestock, based on 100% natural resources that help preserve the environment. Organic 100% Iberian pigs are raised in certified organic farms, where they are fed natural and organic feed before entering the montanera phase, when they will only consume acorns and natural resources from the dehesa. Its production is 100% natural, without additives or artificial preservatives; which involves a much more exhaustive and artisanal care than traditional Iberian hams. A long aging process in natural caves excavated in rock achieves a slow and gradual curing, refining the nuances of its aroma and flavor.
At the cut, the color is slightly darker, due to the absence of nitrites in its production. This action is possible thanks to one of the differentiating values of our company: traceability. Señorío de Montanera guarantees control of the entire production chain, from the breeding of Iberian pigs in the dehesa to the production of the final product (hams, shoulders, sausages, and meats). 100% Iberian acorn-fed products are exclusive and limited, subject to the montanera period, a time between November and March when Iberian pigs live freely in the dehesa and feed exclusively on acorns and natural pastures.

Special storage conditions: Store in a cool, dry place at room temperature.
Conditions of use: Secure the piece to the ham holder so that the outer area of the hoof is facing down. Once you have removed the natural covering, start slicing thin slices with the help of a ham knife. When you reach the bone of the piece, turn it over and repeat the operation. The ideal consumption temperature should be between 18ºC and 24ºC.
Expiration date: There is no expiration date, but it is recommended to consume within 6 months from the time of purchase.
Storage conditions: Dry and cool place (between 10º and 20º) and preferably hung. Once cut, it must be consumed immediately or wrapped in paraffin paper or transparent film to avoid contact with air. It is advisable to cut only what is going to be consumed. It has an approximate consumption period of 3 months once cut, but it is advisable to consume it within 15-20 days.
