You probably already know that the carnaroli rice variety comes from Italy, but you will be surprised to know that it is only known since 1945 and without any doubt, one of the most used rice varieties in that country, the reason is simple, it has excellent characteristics to prepare its classic Risottos. Its large and consistent grain, provides an exceptional balance between absorption and low loss of starch in cooking, which ensures its creamy texture, hence it is the ideal rice for the preparation of risottos.

Specifically that of "Illa de Riu", is produced on the farm itself with selected seeds, offering a variety without mixtures, of superior quality, with guaranteed constancy: always the same taste, the same texture, the same appearance, the same cooking time... ideal characteristics for the most demanding cooks. No wonder it was awarded a star by the "Intarnational Taste Quality Institute"

A perfect rice for the preparation of risottos since, after cooking, it remains consistent on the inside and creamy on the outside. We recommend adding the hot broth gradually, so that it is always juicy but never totally immersed in it, at the beginning you should stir it constantly and decrease the frequency as it approaches the cooking point which is usually about 35 minutes.
