100% Iberian Acorn-fed Ham always has an outer layer of fat (yellow fat) superior to the rest of Iberian hams. Thanks to this layer, the ham can withstand all the months necessary for proper curing.
Total utilization of the ham can vary between 38% and 40%.
This means that not all pieces are the same and can vary by up to half a kg of meat up or down in an 8kg ham, and it is normal for there to be about 3.2kg of meat left in an 8kg ham once we have removed the bone and external fat.
Usually, the larger the ham, the higher % of meat it will have.
