Making: Its vineyards are characterized by their varieties and morphology. Mas Vell is the vineyard with the greatest exposure to the sun; the vineyard stands out for the Garnatxa and a high ripening harvest. Pendents represents the most spectacular and steepest slope within the Perinet estates (in some parts of the vineyard, the slope exceeds 30%). With an entirely northeast orientation, Pendents receives a strong influence of the Mediterranean breeze and humidity that nuances the minerality and concentration of this 1194. Fermentation takes place 80% in 600L barrels, and 20% in stainless steel, and the aging, 18 months in 100% new French oak
Matching: game meats, red meats, acorn-fed ham
