Iberian Loin 75 - 50 % of Acorn-fed Ibérico Marcelino
Our pigs, always raised in freedom, are fed during their first year of life and before the "montanera" with wheat and barley feed from our own production and from nearby farmers. We ourselves are in charge of milling the cereal in the mill located on the <> farm, with the sole purpose of guaranteeing a one hundred percent natural feed. At the time of the montanera, when the fruit of the oak is ripe, our pigs only and exclusively feed on acorns, herbs, mushrooms, truffles and everything appetizing that they find in the pasture.
Our Lomo Ibérico 75 - 50 % de Bellota Marcelino, is elaborated following a totally handmade process. We use the whole loin of our Iberian pigs, marinated with paprika from La Vera, Zamora garlic, spices and sea salt following the traditional recipe of our mother, Cleo, the same that has been used in the family for a lifetime, thus achieving authentic flavors and aromas difficult to imitate. Stuffed into casings and cured for five months in natural cellars, it surprises with its powerful aroma and intense flavour that will transport you back in time if you were lucky enough to participate in a traditional slaughter.
