It has a limited production, it is only produced in vintages considered exceptional and comes from a special terroir characterized by a microclimate that is conducive to producing great wines.
Pago de los Capellanes El Nogal is a red wine produced in the D.O. Ribera del Duero by the winery Pago de los Capellanes.The name of the winery has many years of history. In the 14th century, the village of Pedrosa del Duero, where the winery is located, housed a parish where the chaplains gave mass in exchange for small plots of land. Over time, the parish eventually collected a large plot of land. Years later the lands passed into the hands of the Town Hall, although for the inhabitants of the area those lands would always remain the Pago de los Capellanes.This is a single varietal Tempranillo made with grapes from a single plot, El Nogal. A small plot of 6 hectares of very small production of clay-limestone soils. The temperature during the ripening season can vary around 20ºC between day and night. A strong contrast that helps the grapes to ripen perfectly and to achieve a very balanced acidity, the grapes are harvested by hand. The first step in the winemaking process consists of a maceration of the grapes at low temperature (14ºC), which lasts for 6 days. Alcoholic fermentation takes place for 28 days at a temperature of 26ºC in French oak cones with indigenous yeasts from the vineyard itself, and once the alcoholic fermentation is complete, the wine is transferred to new French oak barrels where it undergoes malolactic fermentation for 20 days at a temperature of 22ºC.
