Tempranillo, Merlot, Syrah, Cabernet Sauvignon y Garnacha

Redondo, equilibrado con buen tanino dulce, acidez equilibrada y paso de boca fácil pero persistente. VINIFICATION: We select the best grapes from our vineyards at their optimal ripeness and harvest them in the early morning to take advantage of the coolness of the night and avoid oxidation during the harvest until the winery. We have hopper trailers that go directly from the vineyard to the winery. The harvest is received throughout the night at the winery and we proceed to destem and crush. We apply liquid CO2 at -30°C to cool the harvest in line at 10°C and avoid oxidations in the must. We macerate for 3 days at 12°C with abundant pump-overs and, once fermentation has started, we let the temperature rise to 28°C for 8 days to obtain color and deplete the sugar. We use our selection of yeasts. We micro-oxygenate the wines to stabilize the color and carry out malolactic fermentation in tanks with our selection of lactic bacteria cultures. We vinify the different varieties separately and make the blend before bottling after aging for a few months in American oak barrels. TASTING NOTES: Color: Bright red with tile shades. Aroma: Medium-high intensity, with a good balance of ripe fruit mixed with vanilla and toasty oak notes. Flavor: Round, balanced with good sweet tannins, balanced acidity, and an easy but persistent mouthfeel.
