Strong, robust, and without impositions. That's how this aged goat cheese Gran Reserva is. In the intensity of its flavor, it hides the authenticity of pure goat milk. No mixtures, only the maturation of the best of the pasture under the eyes of those who understand its silence. Just like someone with something important to say, it never goes unnoticed. Its intensity is followed by a persistent and slightly spicy taste, thus demanding the attention of all kinds of palates.
Artisanally made with pure milk from the Florida goat breed. This breed, native to our area, provides quality milk that, in this case, has not been mixed or treated. Naturally fermented.
Available formats: wedges (0.250 kg).
Recommendations for consumption
This cheese, with great intensity, is ideal to enjoy on its own paired with red wine and good artisan bread.
But, it also offers great culinary possibilities. We can accompany it with fresh cherry tomatoes and basil leaves with a few drops of extra virgin olive oil.
Its flavor profile enhances both traditional and avant-garde recipes.
Maturation time
+ 10 months.
Texture and color
Firm texture, natural rind, and a yellowish cut due to its long maturation.
Flavor and aroma
Intense, persistent, and slightly spicy.
Storage recommendations
• Open the vacuum bag a few hours before consuming.
• Once opened, store in a dry, cool place, and inside a non-airtight container.
• Not recommended to store in the refrigerator as it loses aromas and dries out due to cutting.
• Optimal consumption temperature: 20º - 25º C.
Ingredients
Raw goat milk, animal rennet, calcium chloride, salt, lysozyme, lactic ferments, preservatives in rind E-202 and E235.
