The production process begins by cooling the grapes in chambers at 5-7ºC for 24-48 hours, followed by destemming and transferring the grapes to a 5000-liter tank. Fermentation occurs using indigenous yeast selected from the plots, ensuring a unique process. Malolactic fermentation is carried out in the tank after racking. In tasting, it displays a cherry color with red reflections and a high layer. Its aromas are complex and expressive, featuring notes of black and red fruits along with balsamic nuances. The palate delivers a broad and intense experience with well-integrated ripe tannins and a perfect acid balance.
