Ànima Negra ÀN/2 is a red wine from Mallorca, made with local varieties such as Callet, Mantonegre, Fogoneu, and Syrah. Aged for 12 months in oak barrels and featuring an aromatic profile of red fruits and toasty notes, it is the perfect choice to accompany meats and cheeses.
The Ànima Negra ÀN/2 wine is an excellent example of Mallorcan viticulture, primarily created from indigenous varieties: Callet (65%), Mantonegre, and Fogoneu (20%) and Syrah (15%). Bodegas Ànima Negra, located in Felanitx, developed this wine under the I.G.P. Vino de la Tierra de Mallorca, ensuring quality and a meticulous production process. The grapes are hand-selected in 10 kg boxes, and fermentation occurs at 28ºC in stainless steel tanks after a maceration period lasting 17 to 25 days. To achieve a full and complex flavor, malolactic fermentation also takes place in these tanks.
The aging of the wine lasts 12 months in oak barrels, with 70% being French oak and 30% American, of which 35% are new. The result is a wine with an intense red color and a violet rim, as well as captivating aromas evoking red and black fruits, accompanied by notes of wildflowers and a gentle toast. On the palate, it is dense and meaty, with a fragrant finish that invites further tasting.
This wine pairs perfectly with red meats, poultry, game, cured meats, and semi-cured cheeses, and it is suggested to serve at a temperature of 16 to 17ºC to enjoy its maximum expression. Considering its origin in Spain and the focus on aging, Ànima Negra ÀN/2 stands as an emblem of Mallorca's winemaking tradition.
