Lettuce is one of the most popular vegetables in our diet and stands out for its use as an ingredient in salads. The most well-known varieties of lettuce are:

• Iceberg: compact head with round and crispy leaves, cultivated in the Campo de Cartagena, Valle del Guadalentín, Águilas, and Alicante.
• Little gem or baby gem
• Curly leaf: loose or separated leaves.
• Romaine: elongated leaves, with entire edges and a very wide central vein, or Mini romaine, with a smaller size.
• Stem or asparagus lettuce: leaves with an unpleasant taste.
• Simpson - Oakleaf: with black and dark seeds.

The leaves contain a lot of fiber, properties against anemia and weakness; they are also diuretic, help to induce sleep and cure mild bronchitis. Also, they containvitamin A, in greener leaves, and potassium, giving them antioxidant properties.
