NOTE:
In stuffed eggs, what you detect as firmer is the egg white, which is composed of 80% water and 20% protein. The protein coagulates when heated, giving it the appearance of cooked egg white.
In our case, we are required to give it a double cooking process because we need to apply heat once it is filled and at the moment of packaging. This, combined with the subsequent cooling and vacuum sealing it undergoes, results in that texture, although it is actually more nutritious.
