Cheesecake made with a combination of grazing sheep cheeses from our Labadia cheese factory.
Starting with a buttery cookie base, the combination of aged sheep cheese, our Labadia soft sheep cheese, and a creamy cow cheese, along with precise measures of ingredients, baking times, and resting periods, results in the perfect cheesecake. A cheesecake with a creamy and fluid interior, a medium toasted exterior, a mild flavor with a very balanced hint of sweetness. It truly has it all. A perfect cooking point, its buttery toasted cookie bed, and that “perfect and fluid” point in its heart, which melts in your mouth like a scoop of ice cream. A perfect sweetness that is not cloying. It becomes an almost addictive bite.
