The Smoked Anchovies (in oil) are the result of the collaboration between the high-quality preserves Hazas (winners of *** at the Great Taste Awards) and the smoke from Rooftop Smokehouse.
The new smoked anchovies are a combination of the quality of Hazas preserves and the smoke from Rooftop Smokehouse. These Cantabrian Sea anchovies, aged for over 18 months, are made with spring anchovies, which have less fat and are at the optimal point of flavor, smell, and texture. The smoking process, with oak wood, is very light and acts as a bridge between the umami and the anchovy's saltiness. They are hand-deboned using an ancestral technique that has been passed down from generation to generation.
