It is made from the hind limb of adult Iberian pigs, including leg and bone, and undergoes a salting and curing-maturation process. Brisa Iberian pigs, native to the Spanish dehesas of Salamanca, are special for their genetics and feeding, resulting in premium quality products. The salting process involves covering the pieces with sea salt, one day for each kilogram of fresh weight, at temperatures between 3º and 5ºC and relative humidity of 75% to 85%.
