The 100% Iberian Acorn-fed Paleta with Protected Designation of Origin Jabugo (SUMMUN Quality) is our star product, it takes a follow-up from the birth of the pig of all its feeding (being exclusively this, acorn in the time of the montanera and the natural resources offered by nature itself). The pigs are raised in total freedom in our pastures of oaks and cork oaks.

The follow-up in the curing of this 100% Iberian Shoulder, is one of the most intensive care that the piece has, being this of a minimum of 24 months, until its subsequent marketing.

Recommendations for consumption of 100% Iberian Acorn-fed Paleta Jabugo Denomination of Origin (SUMMUN Quality).

Alba Romero recommends starting to cut the Paleta 100% Ibérica de Bellota Denominación de Origen Jabugo by the mace (with the wide part of the piece upwards) if it is going to be consumed on the go while if the consumption is going to be slower, better to start the cut by the stifle, so we will avoid drying out the part of the mace.

Once the outer fat is clean, the most yellowish which we discard will begin to appear the pinkish white bacon, which we will reserve once cut to cover the piece and prevent it from drying out

We recommend to start cutting the Paleta 100% Ibérica Denominación de Origen Jabugo Alba Romero in thin slices almost transparent, of a size of 4 to 5 cm with a little side bacon to make the slices more juicy.
