A Torna Dos Pasas Escolma is a red wine made from Brancellao, Caíño Longo, Ferrol and Caíño Redondo, from the winery's oldest vines, planted on hillsides on sandy-siliceous soils.
The grapes are harvested by hand. Each variety undergoes fermentation with indigenous yeasts separately in stainless steel tanks. The wine is aged for 12 months in new French oak barrels. The wine is refined in the bottle for a minimum of 3 years before being released onto the market.
A Torna Dos Pasas Escolma is a complex and balanced wine. The time in bottle has polished the tannins giving way to refined notes of ageing. It is a wine like its author, serious, austere and with a lot of character.
