Quesos Afuega'l Pitu Atroncau Blanco Rebollin Pack 2, isá made exclusively with pasteurized cow's milk through a natural process of lactic coagulation. It is a natural rind cheese, the white color tending to yellowish and the consistency of the cheese depends on the ripening time. The name Atroncau comes from the Bable language and describes the unique form in which the cheese is presented. It has a Protected Designation of Origin (P.D.O.) and is produced from whole cow's milk from the villages located in the lower basins of the Narcea and Nalío Nalón rivers in Asturias. For its elaboration, it is curdled in a mold at a temperature between 20 and 25 degrees, from 10 to 48 hours. It has received the 2008 Golden Cincho Award in the category of fresh cheeses of acid coagulation.
