Elaboration and Aging
Pazo Señorans Albariño 2018 is a single-varietal made with Albariño grapes (100%). The harvest is done manually and in small plastic crates that ensure the perfect condition of the grapes upon arrival at the winery. The grapes undergo a skin maceration, a low-temperature maceration that helps extract the aromas of this variety. Pazo Señorans carries out alcoholic fermentation at a controlled temperature of 18ºC.
Once fermentation is finished, it undergoes aging on its lees, in stainless steel, for a minimum of 5 months before being bottled, where it will still rest for a minimum of 4 more months to finish refining.
Tasting Notes of Pazo Señorans Albariño 2021
Appearance: Pazo Señorans has a straw yellow color with some greenish highlights. Clean and bright.
Nose: Very good intensity on the nose. Typical aromas of the Albariño variety such as apricot and peach, along with floral notes.
Palate: Smooth mouthfeel, without edges, with a well-defined volume until the retro-nasal passage.
Pairing
Pazo Señorans is ideal for accompanying vegetables, baked white fish, grilled seafood, seafood in sauce, white fish in sauce, cooked seafood, and raw seafood.
It is recommended to serve at a temperature between 7 and 10ºC.
