Rice of the japonica family with round and pearly grains. Variety of recent appearance derived from the natural selection of BOMBA. During cooking it undergoes an accordion effect that allows the rice to absorb a lot of flavour but remains whole and loose.
It is considered, by experts, to be of extraordinary culinary quality thanks to its chemical composition that keeps the perfect proportion of amylose and amylopectin. It is cultivated only in the ecological environment of the Albufera Natural Park (Spain).
Recommended for Mediterranean cuisine, especially paella. Four proportions of water to one of rice. Cooking time approx. 18 minutes.
