It is for this reason that the pickers selectively choose only those beans that are at the right moment of ripeness, differentiating between the different coffee trees in the plantation, which very rarely ripen at the same time. Bean by bean, the farmers go back and forth from harvest to harvest, checking each bean and its ripeness.
The hand-picking requires a lot of time and effort
This manual harvesting requires special care in which every micro movement of the hands is fundamental. As if it were a dance to choose the right grains and avoid damaging those that are not yet ripe so that they can finish their ripening process in a natural way
