We select the best fresh anchovies from our ports and clean them to remove all impurities. Then we give them the right time in a mix of wine vinegar, lemon and salt and preserve them in olive oil. The result is lomos de boquerón with a mild flavor and low salt content, natural color and a meaty and delicate texture. Perfect to accompany fish recipes

Origin and process

The elaboration of Casa Santoña's anchovies is carried out by completely artisanal methods. The anchovies are frozen for more than 48 hours to eliminate the possibility of anisakis. A treatment in vinegar for more than 24 hours and finally it is packaged in olive oil for direct consumption
