A gravity vatting method is used, which means that the grapes are transported to the tanks by a system that uses the force of gravity to avoid damaging them. This is followed by a cold pre-fermentation maceration for 3 days, which allows the flavors and aromas of the grapes to be extracted before fermentation.
Finally, malolactic fermentation is carried out in barrels, i.e. the wine is transferred to wooden barrels where the transformation of malic acid into lactic acid takes place, which softens the flavor of the wine and gives it greater complexity
