The canned bonito tuna in marinade stands out for having the flavor of traditional canned food, since the marinade (along with salting) is the technique of preservation of tuna that has been traditionally used in the canning sector, and it is called marinade to any method of preserving food in vinegar. Thus, the escabeche that is elaborated in Arroyabe is a broth derived from the mixture of vinegar and oil.
