Atlantic anchovies 0, so called for being Atlantic fishing or fishing Argentina. Selected from the best fishing grounds outside our geography. The treatment of the anchovy is the same as in the Cantabrian, obtaining with another raw material, a product of high gastronomy. Very low salt point and completely manual de-stoning.
The entire production of Casa Santoña anchovies is carried out by completely traditional and artisanal methods, dedicating to each anchovy loin the necessary time to, on the one hand, lower the salt concentration, and on the other hand, eliminate all the bones and ultimately achieve the best aromas of the fish. The finished anchovies are packed for preservation in neutral oil (sunflower) and if desired at the end can be served with a few drops of a suitable olive oil.
