Ingredients: -200gr of asturian beef sirloin steak
-15gr dijon mustard
-10gr of grain mustard
-2 egg themes
-Extra virgin olive oil
-10gr capers
-10 grams of gherkins
-10 grams of peppers
-20 grams of chives
-10 grams of chives
-Black pepper Preparation:
On the one hand we chop the sirloin with a knife trying to make very small and clean cuts without crushing the meat and reserve it
On the other hand we make a very fine mince of the peppers, chives, gherkin, capers and reserve it all together. In a metal bowl and cold if possible we put the two egg themes and mount them with a couple of tablespoons of extra virgin olive oil, to this mixture we add the two mustards and mix well

Add the chopped pickles and the meat and stir everything very well so that all the dressing is integrated into the meat
Try salt and spice and rectify to taste
Let it rest for about 10 minutes to settle the dressing and place it in a circular mold
We can serve it with some toasted bread and freshly fried potatoes
