In the natural caves of the Gojon cheese factory in Challonges, you can discover what nature does best in terms of refining. It is in these natural tunnels, 100 meters deep in the very rock of the cliff that the best cheeses of the Jurassic region are matured. Les Caves d'Affinage de Savoie
Les Caves d'Affinage de Savoie is an artisanal ripener located in Rognaix near Albertville in Savoie. They select and mature cheeses in the heart of an old powder magazine, dug 65 meters deep under the Savoyard mountain. This tunnel transformed into a maturing cellar with a high natural hygrometry (95 to 98%) and the natural temperature between 9°C and 13°C confers an exceptional maturing to the cheeses.
Fromagerie Gojon
It was while walking along the Rhone River in Challonges (74910), observing holes in the walls of a cliff that the idea of installing a cheese cellar was born. A constant temperature (4°c to 5°c) and hygrometry (95%) for slow natural ripening. A family business that started with 500 wheels of Comté and today refines more than 11,000 pieces.
