The block of foie gras is a pure but reconstituted product. Here it contains only foie gras, but it is an agglomeration of foie gras pieces from several lobes.
Less fine in flavor and aroma than whole foie gras, it is still a high-end product ideal for spreading as an aperitif.
Accompany with toasted or ungarnished country bread. Also use for tournedos Rossini or duck breast burger with foie gras. Serve with a Bergerac mellow (Rosette, Côtes de Montravel), a sweet wine (Monbazillac) or a red Bergerac with little tannin.
Stored for 4 years after making in a dry place and away from light. Put in the refrigerator 48 hours before serving. Serve very chilled.
Ingredients: reconstituted duck foie gras 90%, water, salt, black pepper, sugar.
