Fermented drink made from the milk of our Churra sheep, blueberries and the inoculation of small white granules called "cultures", which are a combination of bacteria and yeast that activate the milk fermentation process, resulting in a new, live product with increased acidity and enhanced probiotic properties.
This fermentation process is a slower fermentation lasting 18 hours, in which microorganisms transform the milk sugar into ethyl alcohol and carbon dioxide. This results in the slight acidity characteristic of kefir. This process takes place in the absence of oxygen, unlike lactic fermentation which involves oxygen.
