Unmovably, this ratafia from Sant Quirze de Besora is the result of macerating aguardiente with green walnuts and other fruits and herbs.
Once aged, it is filtered, prepared into syrups, and left to rest in oak barrels.
The aging process adds smokier and woody notes.
