Wine made from the Verdejo variety

Wine made from Verdejo variety. The grapes are harvested at night/early so that the grapes arrive as cold as possible to the winery. Avoiding light and high temperatures we protect the must against oxidation. The fermentation temperature has been around 13 degrees giving a higher production of aromas and extending the fermentation up to 25 days. At the end of fermentation, the wine has remained on its lees for 3 months, moving these every week to obtain a silkier and more structured wine, increasing its persistence in the mouth

It has aromas of pineapple, mango and green apple with an aniseed background. On the palate it is sweet, fresh and balanced, easy to drink, with a fruity character and a pleasant acidity
