The name Cajun comes from the word "Acadian", after the French settlers who left Canada when it was occupied by the English in 1755. The settlers settled in Louisiana , and it was there that the culinary exchange between Creoles and French began. This mixture is used as a condiment in the recipe for jambalaya and gumbo and in fish, meat or chicken
